Am Nordhang des Ätna, in der Contrada Santo Spirito nahe Castiglione di Sicilia, wachsen die Carricante-Reben für diesen besonderen Cru-Weißwein auf dunklen, aschereichen Vulkanböden. Die Weinberge liegen auf rund 700 bis 800 Metern Höhe und sind teilweise mit bis zu 100 Jahre alten Reben bestockt – ideale Voraussetzungen für einen Wein mit außergewöhnlicher Tiefe und Terroirprägung.

Nach der sorgfältigen Handlese werden die Trauben schonend verarbeitet, bevor der Wein teilweise im Holz ausgebaut wird. Dadurch entsteht ein vielschichtiges Aromenspiel aus weißen Früchten, Zitrusnoten und floralen Nuancen, ergänzt durch feine mineralische und leicht würzige Akzente. Am Gaumen zeigt sich der Wein strukturiert, frisch und lang anhaltend mit salziger Mineralität – ein typisches Merkmal der vulkanischen Herkunft.

Kulinarisch harmoniert dieser elegante Weißwein besonders gut mit gegrilltem Fisch, Meeresfrüchten, Pasta mit Muscheln oder mediterranen Gemüsegerichten. Auch zu Ziegenkäse oder leichten Vorspeisen entfaltet er seinen Charakter.
