TASTING NOTES
Colour Rubi red colour.
Aroma Fruity, vinous, complex aroma. Notes of stewed fruit, cassis.
Mouth On the palate, wood is present but well-integrated. It presents itself very fresh and enveloping. Good mouthfeel and very persistent.

Food Pairing
It pairs well with any stewed meat dish, game and hard cheeses. It should be consumed at a temperature of 16º C.

Vineyards
This wine is produced from grapes sourced from a vineyard plot with vines aged between 20 and 30 years, located between 100 and 300 meters above sea level.

Vinification
Crushing and destemming of the grapes, fermentation in Stainless Steel Tank at a temperature of 25º C with periodic pump-overs for the extraction of phenolic compounds. Co-inoculation of Fermentation Yeasts and Lactic Acid Bacteria for simultaneous completion of alcoholic fermentation and Malolactic Fermentation. Post-fermentation maceration for 3 weeks.

Barrel Aging
Aging in a 7000L French oak cask for 18 months and in new or used 300L French oak barrels.

I've been told it does not work with 2% organic milk and that I need to switch to whole milk, which will solve my issues. Not sure how whole milk will help with the heating element?
