The Stir - Das WDT-Tool ist ein präzises Werkzeug, das in der Espressozubereitung eingesetzt wird, um die Verteilung und Dichte des Mahlguts im Siebträger zu optimieren. Es dient primär dazu, Klumpen im Kaffeemehl aufzulösen und die Partikel homogen im Sieb zu verteilen. Dies minimiert das Risiko von Channeling und verbessert die Extraktionseffizienz.
Funktionsweise im Detail:
- Befüllen des Siebträgers: Nach dem Mahlen wird das Kaffeemehl in den Siebträger dosiert. Oft entstehen dabei Klumpen durch elektrostatische Aufladung oder durch ungleichmäßige Partikelgrößenverteilung (Grind Distribution).

Einsatz des WDT-Tools:
- Das Tool besteht aus sehr feinen Nadeln, aus Edelstahl 306 mit einem Durchmesser von 0,3 mm. Die Nadeln werden in einer kreisförmigen oder schlangenförmigen Bewegung durch das Kaffeemehl geführt.
- Diese Bewegung löst kompakte Partikelansammlungen (Klumpen) auf und sorgt für eine gleichmäßige Verteilung des Mahlguts im Sieb. Der Prozess verbessert die Partikeldichteverteilung und reduziert die Bildung von „Hohlräumen“ oder ungleichmäßigen Zonen im Kaffeebett.
- Redistribution und Tampen: Nach der Anwendung des WDT-Tools wird das Kaffeemehl durch sanftes Abklopfen des Siebträgers nivelliert. Anschließend erfolgt wie gewohnt die Redistribution mit dem Chisel und das Tampen das Tampen, bei dem das Mahlgut mit einem Tamper unter gleichmäßigem Druck komprimiert wird. Eine glatte und homogene Oberfläche des Kaffeebetts ist hierbei entscheidend.
Ziel:
Das WDT optimiert den Wasserfluss durch das Kaffeebett während der Extraktion. Bei einer homogenen Verteilung des Mahlguts wird der Widerstand gleichmäßiger, wodurch das Wasser keine bevorzugten Fließwege (Channels) findet. Das Ergebnis ist eine gleichmäßige Extraktion, die durch intensivere und ausgewogenere Aromen im Espresso spürbar wird.

- Konsistentere TDS-Werte (Total Dissolved Solids) im Espresso.

- Verbesserung der Mouthfeel-Qualität durch ausgewogene Extraktion von Ölen und gelösten Feststoffen.
Das WDT-Tool ist besonders in der Third-Wave-Coffee-Szene etabliert und wird häufig bei hochsensiblen Zubereitungen mit Single-Origin-Kaffees eingesetzt, bei denen jede Nuance des Geschmacks maximiert werden soll.
Woher kommt der Name WDT Tool?
Das WDT Tool hat seinen Namen von John Weiss, der das erste Tools dieser Art entwickelt hat.(Weiss Distribution Technique).

I bought this book in early spring to get clarity on how to use AI into my day-to-day business. I read through the book quickly because it’s very easy to read. I love the back part of the book because it details step by step how to implement the techniques he uses. I thought wow now I have somebody (who’s already succeeded) to help me figure out how to implement AI. With all the information out there it’s been hard to know what to use and what not to use and what's practical and what's not practical.
From the very first page: Dan does not waste your time. I’ve read countless books over the course of my life, and this easy-to-read book stands out because it inspires and motivates the reader to take action immediately.
The author takes complex concepts, the kind that usually make your eyes glaze over—and breaks them down into clear, step-by-step processes. Instead of just telling you what to do, the author shows you exactly how to do it.
This is a practical book demands action. The author makes it clear: knowledge without action and implementation is worthless. He encourages readers to begin stating,” Don’t wait to start, just start, (do the outreach work) build the processes and practice, practice, practice, that's what this book is all about. Act first and then tweak the process, because nothing will happen if you don’t get started.
