酥油是印度歷史悠久的傳統食油，用牛或水牛的牛油提煉：將牛油以中低溫加熱，讓水份完全揮發，再隔走乳固體蛋白質，餘下的就是金黃色的純脂肪。雖然原材料是牛奶，但經揮發過濾後，已大體不再存在牛奶中的乳糖和酪蛋白，所以有牛奶或乳糖不耐受的人士也可以食用，而且酥油的烹飪煙點達攝氏210度，比牛油、椰子油和一般食油都高，不容易氧化產生自由基，所以最適宜用作高溫煮食，亦可搽麵包餅乾或製作甜品等。

Ghee has the advantage that it doesn’t degrade or blacken during cooking, even at high temperatures. With a high smoke point of 210 degrees Celsius, it is ideal for use in everyday cooking including browning and crisping.  It is free from lactose.
