The Palo Cortados are among the most special wines within the Jerez Xrs Sherry Denomination of Origin. Despite undergoing the physical chemical oxidative ageing process used for oloroso wines, the resulting product is not an oloroso, and in fact, its special organoleptic characteristics makes it seem like somewhat of a cross between an oloroso and an amontillado. Perhaps we could say that
