提到「白木久」BLACK LAVEL就會想到黒麹。黒麹通常是用來釀造燒酎，黑麹當然是黑色的。而日本清酒的麹通常使用黄麹，很少會使用黒麹。「白木久のBLACK LABEL」只是酒母使用黒麹。整個釀造清酒的過程中除了酒母，其餘(三段仕込み)釀造過程和平常一般使用黃麹。酵母是用帶芳香系列，有草莓的酸甜香氣為特徵。味道清爽。擁有黒麹長處加上酵母的特徵。大家不妨可以試試！

通常釀造清酒會使用「酒造好適米」，但在2015年開始改變全面利用食用米來釀造清酒。

通常日本酒只使用一種類型的酵母，他們卻使用三種不同類型的酵母來釀製，經過多次反複試驗，開發新派的日本清酒。
