Manufacturing Process

• Vineyard Location: Located in the Centre of Sicily (Caltanissetta), C.da Cusatino, at $580$ meters above sea-level in lime-clay soils.

• Harvesting: Middle of October, by hand.

• Yield: $80$ quintals per hectare.

• Fermentation & Maceration: Red vinification process in steel tanks at a controlled temperature of 25∘C for $15$days.

• Conservation: In steel tanks at a controlled temperature of 15∘C.

• Aging in Wood: For $18$ months in new and 2nd passage barriques.

• Aging in Bottle: $12$ months.

• Bottled Wine Conservation: 16∘C.

Organoleptic Characteristics

• Colour: Intense purplish.

• Smell: Notes of aromatic herbs, especially spicy hints and black pepper.
