Over Claude Riffault

Het werk in de wijngaarden is essentieel voor het produceren van kwalitatief uitstekende wijnen. Als ervaren wijnbouwers, ziet Claude Riffault het als hun rol om de best mogelijke balans te scheppen tussen bodem en plant, afhankelijk van de klimatologische omstandigheden. Claude Riffault telt 13,5 ha wijngaarden in totaal, waarvan 10,5 ha is aangeplant met Sauvignon Blanc en de overige 3 ha met Pinot Noir. De wijngaarden zijn verspreid over 6 percelen ten noorden van Sancerre, t.w.: Les Boucauds, Les Chasseignes, Les Denisottes, Les Chailloux, Les Desmalets en La Noue.

Vinificatie

Koude schilinweking en pneumatisch persen. De alcoholische fermentatie vindt voor 70% plaats in roestvrijstalen cuves en het andere gedeelte geschiedt in houten vaten. De wijn rijpt vervolgens 7-8 maanden sur lie" met eventueel battonage. "
