De Languedoc Roussillon was veertig jaar geleden een twijfelachtig wijngebied. Er kwam veel wijn vandaan; heel veel. Echter was de kwaliteit op zijn vriendelijkst gezegd flink onder de maat. Veel wijnhuizen hebben de laatste decennia hard gewerkt en dit heeft zich uitbetaald. Chevancy Reserve Chardonnay wordt gemaakt door een coöperatie. Dit betekent dat vele wijnboeren de handen ineen hebben geslagen en samen de meest fenomenale wijnen weten te produceren. Doordat de aanwas van druiven oneindig is, kunnen de wijnmakers enkel alleen de beste trossen Chardonnay druiven gebruiken voor deze witte wijn van Chevancy.
