Matcha is een schaduwthee, d.w.z. 2 weken voor het plukken worden de theestruiken met matten of zeilen in de schaduw gezet. De struiken reageren hierop door extra chlorophyl aan te maken. Chlorophyl geeft matcha haar felgroene kleur en ontgiftende eigenschappen.
