Sadayana is het Soendanese woord voor samenwerken. Meer dan 200 boeren uit West-Java leveren hun kersen aan dit washstation, opgericht in 2022 met steun van Sucafina.

Na zorgvuldige handselectie fermenteert de koffie 120 uur anaeroob in verzegelde Ecotact-zakken. Daarna wordt de parchment met aanhangend slijmvlies (honey) gedroogd op raised beds gedurende 10 tot 14 dagen.

In de cup: gebakken perzik en peer spelen samen met bitterzoete cacao. Een dik, opaak body met lange afdronk van cacaonibs. Op de achtergrond tabak en bakspecerijen, een onmiskenbaar Indonesisch karakter. Het anaerobe proces is subtiel aanwezig, zonder overdreven wijnachtige tonen.
