Clear, pale yellow white with a hint of gold. Fresh, clean and direct nose. Lemon, grapefruit, young pineapple, white peach, small flowers and mineral notes. Lively, tense, super fresh on the pallet. Fruity but above all mineral, with saline notes that make you want more (and more). 

Perfect for aperitif, seafood platters, grilled fish.

Grapes: white Grenache, Bouysselet, Chardonnay. White Grenache from Mont Ventoux is blended with Bouysselet (a Savagnin relative, how chic :) and a touch of Chardonnay.

Age of the vines: between 28 and 36 years old.

Winemaking: direct press, light settling, and parcel selection for the Bouysselet. Fermented and aged in 7 x 500L barrels: two new with light toasting (non-oaky), others aged one to three vintages. Aged one year, racked and blended in tank in October. A tiny splash of lighter, more acidic 2024 vintage added for balance. Stable in air, gastronomic in style.

Soil: gravelly soils with rounded stones.

Climate: coolness from the Southwest and sunshine from the Southeast.
