De wijn wordt noch gefilterd noch geklaard. 

Zeer intense, onderbouwde neus van rijp, rood fruit, kruid, cacao en koffie. Krachtig, met mooi verweven tannines. 

Deze Garum kan verschillende gerechten aan: stoofschotels, rijstschotels met vlees, mediterrane gerechten met gegrild vlees, barbecues met hoogwaardige producten, rood vlees, wild, schapenkaas zoals Pecorino. Ook lekker bij bijvoorbeeld een stevige lasagne.
