Over Domaine Fredavelle

Domaine Fredavelle is een familie landgoed opgericht door kameraden, David Ravel en Olivia Menigoz. De passie voor de wijngaard en de liefde voor wijn leidde tot de oprichting en eerste oogst in 1999. Tegenwoordig heeft het landgoed 32 hectare aan wijngaard verspreid over de Coteaux d'Aix-en-Provence. De wijngaard ligt in de stad Éguilles, 10 km ten westen van Aix-en-Provence, op een hoogte van 300 meter. De traditionele druivenrassen van de regio worden geteeld: Grenache, Cinsault, Syrah, Cabernet Sauvignon, Carignan, Mourvèdre, Caladoc voor rode wijn en rosé en de Vermentino, Sauvignon Blanc en Ugni Blanc voor witte wijn.

Vinificatie

De druiven worden 's nachts geoogst om de druiven vers te houden en oxidatie te voorkomen. Fermentatie onder lage temperaturen om de fruitige aroma's te behouden.
