Verse zalmfilet: waarom met vel?

Het vel van zalm is meer dan bescherming - het is een smaakmaker. Tijdens het bakken knappert het vel en geeft het een extra laag textuur en smaak. Bovendien houdt het vlees zijn vorm beter tijdens bereiding. Koop je de zalm met vel, dan kun je altijd nog het vel verwijderen voor serveren - andersom kan niet. De schubben zijn al verwijderd, dus de zalm is direct klaar voor gebruik.

Bereidingsopties

  • Pan (vel naar beneden): Op de huid bakken op middelhoog vuur, 4–5 minuten. Even omdraaien, 1 minuut. Huid wordt knapperig, vlees blijft sappig.
  • Oven: Op 180°C, 15–18 minuten afhankelijk van dikte. Eenvoudig en consistent.
  • Gravlax: Het grote stuk is ook perfect om zelf gravad lachs van te maken.

Bewaren

In de koelkast (0–4°C). Dezelfde dag of volgende dag bereiden. Invriizen kan prima - portioneer eerst voor gemak.
