Producing River Antoine Estate's Rivers Royale Grenadian Rum is a process steeped in tradition. Sugarcane is harvested and crushed to extract juice which is then boiled in large copper pots. This concentrated syrup is transferred to fermentation tanks where wild yeasts trigger natural fermentation. The fermented mixture is distilled using old-fashioned pot stills, resulting in strong overproof rum. This is then diluted to a 150 proof rum as is required by Grenadian law for road safety reasons. No ageing takes place, thus retaining its clear color. Its unique fabrication method and lack of industrial refinement make this rum a wonderful testament to traditional rum-making.
